The Afghan-Inspired Yogurt Pasta You’ll Crave All Summer 🍝✨

She’s tangy. She’s garlicky. She’s got a kick. And she just might become your go-to summer dinner.

We teamed up with Eat Senza to give their cozy lil pastina an Afghan twist—with warming spices, cooling yogurt, and a spicy drizzle of our OG Green Chutney to tie it all together.

It’s comforting, craveable, and comes together with ingredients you probably already have on hand.

Ingredients

For the Beef (or Lentils)

  • Olive oil

  • 1 small onion, finely chopped

  • Ground beef or sautéed lentils

  • Salt + pepper, to taste

  • 1 tbsp tomato paste

  • ½ cup tomato sauce

  • ½ tsp ground coriander

  • ½ tsp turmeric

  • ½ tsp ground cumin

  • 1 clove garlic, minced

  • Optional: red chili flakes if you want extra heat

For the Yogurt Sauce

  • 1 cup plain yogurt (strained if possible)

  • 1 tsp crushed dried mint

  • Salt to taste

Pasta + Toppings

  • Senza pastina or any small pasta shape

  • Chopped cilantro + green onions

  • Tursh OG Spicy Green Chutney 💚

Instructions

  1. Cook your pasta:
Boil the pastina in salted water until al dente. Rinse under cold water and set aside.

  2. Make your beef (or lentils):
In a pan over medium heat, add olive oil and chopped onions. Once soft, stir in garlic, spices, tomato paste, and tomato sauce. Add ground beef (or lentils), season with salt and pepper, and cook until fully browned and fragrant.

  3. Mix the yogurt sauce:
In a separate bowl, whisk yogurt with dried mint and a pinch of salt. You want it smooth, tangy, and refreshing.

  4. Assemble the dish:
In a shallow bowl or plate, layer the pasta, spoon over the meat (or lentils), then top with a generous swirl of the yogurt sauce.

  5. Finish with flair:
Sprinkle chopped cilantro and green onions, then drizzle generously with our OG Spicy Green Chutney for that final zesty kick.

Pro tip:
Let each person build their own bowl—great for gatherings or a chill dinner night.

This is one of those dishes that feels like comfort food but tastes like a summer reset. Bold, balanced, and ready to be on repeat.
