Ingredients (Makes 1 Burrito)

Burrito Base:

  • 3 eggs

  • 2 slices turkey bacon

  • 1 large tortilla

  • ½ avocado, sliced

  • Shredded cheddar cheese

  • 1 tbsp Tursh OG Spicy Green Chutney

  • Fresh cilantro, to garnish

Crispy Potatoes:

  • 5 small potatoes, boiled + diced

  • ½ yellow onion, diced

  • ½ bell pepper, diced

  • ½ tsp onion powder

  • ½ tsp garlic powder

  • A few shakes paprika

  • Salt & pepper, to taste

Instructions

  1. Cook your turkey bacon. In a large skillet, fry bacon until crispy. Remove and drain on paper towels.

  2. Make crispy potatoes. Using the same pan with the grease, add diced potatoes. Season with onion powder, garlic powder, paprika, salt, and pepper. Cook until golden and crispy.

  3. Sauté veggies. Push potatoes to the side. Add diced onion and bell pepper, cooking until soft and golden. Stir together with potatoes to combine flavors. Remove from skillet.

  4. Scramble eggs. Whisk eggs with a pinch of salt. Pour into skillet and cook over medium-low heat, making large strokes with a spatula. Add shredded cheddar and let it melt gently.

  5. Assemble burrito. Lay tortilla flat. Layer crispy potatoes, cheesy eggs, turkey bacon, avocado slices, and a generous spoonful of Tursh Green Chutney. Roll tightly.

  6. Garnish & enjoy. Top with fresh cilantro and serve hot.
